Yummy Granola Bars

The Yummiest Granola Bars Ever!!!!

Granola Bars

1 1/2 cups rice krispies (up to 2 cups)
1 1/2 cups quick oats
1/2 cup brown sugar
1/2 cup honey
1/2 cup peanut butter
1 tsp. vanilla

Optional add ins
1/2 cup raisins, chopped nuts, seeds, flax, coconut
1/3 cup mini chocolate chips

  1. Prepare a greased 11 x 7 inch or 13 x 9 inch baking dish (thinner bar).
  2. In a large bowl combine rice krispies, oats and optional add in.
  3. In a saucepan stir the honey and brown sugar until just at a boil.
  4. Immediately removed from heat and stir in the peanut butter and vanilla until well combined.
  5. Pour over the dry ingredients in the bowl; mix to combine.
  6. Mix in mini chocolate chips, working fast. The mixture hardens quickly.
  7. Transfer themixture into prepared baking dish, then using slightly wet hands push evenly down into the pan.
  8. While the mixture is still soft, for easier slicing take a sharp knife and slice into desired size bars.
Yummy! They make 20 bars, 100 calories each. 1.6 grams fat, fiber 1%, sugars 11.7g Protein 1.5g

I'm going to talk to my friend and find out how to make these fiber bars, because they are so stinkin good I'd eat them instead of fiber one bars.

Cinnamon Rolls


I personally am not a big fan of cinnamon rolls, but I have been on the lookout for a good recipe for awhile now. I've tried probably half a dozen different ones and this one is my favorite so far. They taste good and the recipe uses the rapid rise yeast which makes them relatively quick for a yeast roll. Enjoy!

Creamy Chicken and Spinach Soup


Thought I'd share this yummy recipe. I made it the other night and all my kids loved it! So healthy and good. It's from "Cooking Light" magazine.
Ingredients
1 (9 ounce) package refrigerated cheese tortellini or 1 cup uncooked pasta
1 (14 1/2 ounce) can
fat-free chicken broth
2 (10 3/4 ounce) cans reduced-fat cream of chicken soup
1 (10 ounce) package
frozen chopped spinach, thawed
1 (9 ounce) package frozen diced cooked chicken breasts (or left-over cooked chopped chicken breast)
2 cups
nonfat milk
1/2 teaspoon
dried thyme
1/4 teaspoon
pepper
Directions
1 Cook tortellini in a saucepan according to package directions, using 1 can of broth instead of water.
2 Add in soup and remaining ingredients, stirring well.
3 Bring to a boil; cover, lower heat to medium, and cook until thoroughly heated.
Recipe serves 6. 7 grams fat, 260 calories, 2.3 grams fiber, 23.4 grams protein, 5.1 grams sugar
